Breakfast Panzanella

If you really want to start the day off with a special treat then you've come to the right place. This delicious Breakfast Panzanella recipe combines all different kinds of berries, fresh peaches and thick slices of challah. First you need to make the batter to dip the challah into, then cook it up and mix together with fresh berries. If you add a little drizzle of honey to the top it makes this breakfast dish next level. Enjoy! 


  • 8 thick slices of challah
  • 3 eggs
  • 1/2 tsp. cinnamon powder
  • 1/2 tsp. vanilla extract
  • 1 tsp. flour
  • 1 cup heavy cream
  • 1 tsp. butter
  • 1 quart strawberries, sliced
  • 1 pint blueberries
  • 1 pint raspberries
  • 1 pint backberries
  • 2 ripe peaches
  • 4 oz (nut-free) granola
  • 4 tsp. honey


  1. Preheat a griddle or large non-stick pan on the stove top over medium heat. Lightly coat the surface with butter. Dip the bread into the batter (combining eggs, cinnamon, vanilla extract, flour and heavy cream). Then, cook on the griddle.
  2. When the bread is caramelized on both side, place the French toast on a cutting board and slice into large pieces.
  3. Transfer to a mixing bowl and toss together with all of the fresh berries. 
  4. Divide the dish among 4 plates of bowls and garnish each dish with a little drizzle of honey.
