Easy Black Bean Salsa

Did you know that beans have been cultivated by humans for over 6,000 years? Celebrate this historic legume on Cinco de Mayo by trying our kid friendly, Mexican inspired recipes, like this easy to make Black Bean Salsa. Black are a great source of protein, and you can easily add any other seasonal veggies to make this recipe even more colorful. !Buen provecho!


  • 1 14-ounce can low-sodium black beans, rinsed and drained
  • 2 cups corn kernels
  • 1 small red bell pepper, seeded & chopped (or tomato)
  • 2 scallions, chopped
  • 1 ½ teaspoons ground cumin
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Kosher salt & pepper to taste
  • ¼ cup cilantro, chopped

In a bowl, combine the beans, corn, pepper, scallions, cumin, lime juice, olive oil, salt, pepper, and cilantro. Stir to coat evenly. Serve with your favorite chip or vegetable.
