We love our broccoli at Red Rabbit, and our kids do too. Steamed, roasted or sauteed in garlic, broccoli takes home the prize for the most popular lunch side. One of our kid tested recipes incorporates this versatile vegetable and adds our favorite ingredient - cheese. Serve as a side and don't forget the dipping sauce! We promise your little ones will not be disappointed.
Broccoli Bites with Lemony Yogurt Dipping Sauce
Yields: Approximately 25, 2-inch bites
For Cheddar Broccoli Bites
- 2 large eggs
- ⅛ teaspoon garlic powder
- ½ teaspoon kosher salt
- Pinch black pepper
- ¾ cup whole wheat flour
- 1/3 cup shredded cheddar cheese
- 1 medium head broccoli (3 cups chopped), chopped into small florets, steamed and cooled (no stem)
- Oil spray or canola oil for cooking
For Lemony Yogurt Dipping Sauce
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- Pinch of salt
- 2 tablespoons chopped chives
For the lemon yogurt sauce, combine yogurt, lemon juice, salt, and chives in a small bowl. Whisk until well combined. Set aside or keep refrigerated until ready to serve.
In a large bowl, lightly beat the egg. Stir in the garlic powder, salt, pepper, flour, and cheese. Add in the cooled broccoli and stir to combine.
Using a potato masher or food processor, gently mash or pulse the ingredients until the mixture begins to form a mass but remains chunky.
Heat oiled griddle or fry pan over medium heat. Using a small spoon or your hands, scoop out a small amount of the mixture and form into a ball, about 2 inches in diameter. Place on hot surface and press down lightly to flatten. Allow to cook for about 2-3 minutes, until bottom begins to brown. Flip and allow to cook until other side browns. Repeat for the remains of the batter, placing multiple pancakes on cooking surface at a time.
Transfer cooked pancakes to a paper towel to release some excess oil. Place on baking sheet in the oven at 200ºF to keep warm until ready to serve.
Serve broccoli bites with Lemony Yogurt Dipping Sauce as a dipping side or topping.
