Try a Red Rabbit original recipe perfect for kids- our asian influenced Three Pea Stir Fry. It's bright, it's green, it's easy to make and and it's the perfect dish to ring in the Year of the Monkey.
Yields: 8 servings
- 2 tablespoons coconut or canola oil
- 2 large cloves garlic, minced
- 2 tablespoons ginger root, minced
- 2 cups sugar snap peas
- 2 cups snow peas
- 1 ½ cups green peas
- 4 teaspoons soy sauce
- 2 teaspoons rice vinegar
Heat 1 tablespoon oil in large frypan over moderately high heat until hot. Add garlic and ginger and stir-fry until fragrant, about 1 minutes.
Add sugar snap peas and snow peas. Cook until crisp-tender, about 3 minutes.
Add green peas and stir-fry until hot, about 2 minutes. Turn off heat but leave on stove. Pour soy sauce and vinegar over pea mixture and toss well.
Serve with brown rice.
