We all know cauliflower is delicious when roasted, but sometimes you just need a quick and easy no-cook snack that is packed with flavor. This Cauliflower Popcorn recipe is a great way to enjoy this edible flower as a healthy, flavorful, quick snack! This recipe is most fun when you can find different varieties of cauliflower such as purple, cheddar (orange) or green to mix together for a colorful bowl. Your child will have a blast helping to snap off florets and shake up the ingredients, so be sure to include him/her in the preparation process. Then enjoy in front of a movie as a family or just as a healthy after-school snack!
Yields: 3 cups
- 1 medium head cauliflower (or 2 small heads of different varieties), stems removed and broken into popcorn-sized florets
- 1 tablespoon olive oil or melted butter
- 1 tablespoon garlic powder or onion powder, or a combination of both
- 1 teaspoon fine sea salt
- 2 tablespoons finely grated parmesan cheese or nutritional yeast
Place all ingredients into a large ziploc bag and zip so it is securely sealed. Shake until cauliflower is well-coated with toppings. Enjoy!
