Rhys Powell says memories of growing up in the Bahamas inspired him to quit his equity-trading job and launch his healthy-school-lunch venture, Red Rabbit, in 2005. There, every fruit and vegetable was picked ripe to be eaten immediately. Since 2005 Rhys has grown the company from just a few neighborhood schools to more than 150 throughout New York City. Rhys is a 2013 Crains 40 under 40, a recipient of the Goldman Sachs 10,000 Small Business Awards and MIT graduate with a degree in Computer Science.

This regionally sourced and competitively priced food is delivered from its kitchens in New York City to school children throughout the Greater New York area. It also has an active educational program. Before founding Red Rabbit, Powell studied computer science and engineering at MIT and worked as an equity trader for a privately held financial services firm, Carlin Financial Group.

A super simple way to get kids to eat their veggies

Rebecca Gildiner, the director of the education program for Red Rabbit, an organization that provides healthy school meals for kids in New York City, told CBS News, "It's empowering for kids to be part of meal preparation by growing their own food or by chopping vegetables and learning to cook."
