Made From Scratch
Our team arrives to the kitchen in the wee hours of the morning to begin slicing, dicing, chopping, roasting and baking to make sure every one of our schools gets their homemade food. Highlights include fresh baked muffins or our veggies cut daily used in a wide range of our recipes.=]
Seasonal, Local Sourcing
Whenever possible, we source from nearby partners that we know and trust. We go to great lengths to identify partners that are mission aligned and conduct ethical farming practices. If it's currently hanging from a tree or growing from the ground - we'll take it. We incorporate seasonal ingredients whenever possible like strawberry rhubarb applesauce or ranch dressing with fresh dill mixed in. You can taste the freshness.
We make and serve food the way it is supposed to be eaten combining ingredients whole together to create every single one of our dishes. This is highlighted across the menu, for example, our Cauliflower Mac and Cheese is a combination cauliflower, pasta, cheese, and milk - simple and whole ingredients.
We partner with suppliers who are doing the right thing and we are upfront about all of the ingredients we use. We have strong relationships with every single one of our partners.
- Hot Bread Kitchen: A local Harlem bakery featuring multi-ethnic breads inspired by its globally diverse staff, such as 100% organic tortillas made from non-GMO corn and Challah bread made with local eggs.
- John’s Market: We source majority of our produce from John’s Market who also services many of the fine restaurants in New York City. We receive daily deliveries to ensure maximum freshness and can source any of our specialty, hard to find items (like hami melon or dragon fruit) directly from the source.
- London Meats: Based out of New York City, London Meats provides us with chicken and beef that have no hormones, antibiotics, or pesticides.
- Green Market: For some of our seasonal fruits & vegetables we partner directly with the Green Market to source from small or mid-sized farms in the Northeast region.Specifically, our Peaches from them this summer were so sweet and juicy!
Our entire team has gone through rigorous food safety training to ensure every single bite is ready and safe to eat. The majority of our kitchen staff have their Food Handler's Certification and practice several checks and balances within every department - everything from the produce line to our bakery.
