It's hot out there this summer so we're focusing on fresh, seasonal ingredients! We've added several "cold" items to our menu such as refreshing salads and our version of the classic "PB&J" sandwich. Also, you might have already noticed how sweet and delicious the watermelon is and we're doing out best to keep it coming. Whether it be at camp or on field trips we know kids are on the go so we cater many of our new summer menu items off of that mentality. Check out the menu highlights below and tell us what you think!
Chicken Caesar Salad - We combine crisp romaine lettuce with whole grain croutons, roasted chicken and mozzarella cheese and then top it off with our house made Caesar dressing. After applying the dressing on top make sure to mix it all together so that every single leaf gets dressed - believe us, it's that good! (FYI - we add hard boiled eggs instead of chicken for all of our vegetarians out there who need to get their protein in)
Caprese Salad - Can you think of a better combination than a fresh, juicy tomato, herbaceous basil, and mozzarella cheese in the summer? Neither can we. We combine grape tomato with pieces of mozzarella cheese and basil then dress with a light and made-from-scratch vinaigrette. This recipe with simple ingredients is an easy one for you to make at home with your kids as well and is the perfect dish for a family picnic. (You can find other recipes to accompany it here)
Watermelon - For us, one bite of watermelon brings back fond childhood memories of summer and we're trying to give your kids as much of that as possible this summer. Watermelon as the fruit that accompanies our breakfast and lunch menu is delicious and refreshing. We usually serve the traditional pink watermelon, but don't be surprised if sweet yellow watermelon pops up sometime soon!
"Pea" Butter & Jelly Sandwich - We figured out a way to bring the quintessential school lunch item to life while continuing to main a nut free kitchen. (We know how common nut allergies are so we want to assure our school partners, kids, and parents that the food they order is not problematic for anyone with an allergy - mild to severe). Pea butter combined with delicious strawberry jelly on our whole grain toast makes for an easy, sweet yet satisfying meal. This meal often comes paired with seasonal veggies such as cucumber slices or pepper strips.
