New Lunch Items this Fall!

With the fall semester in full swing, our kitchen has sent out a bunch of new and exciting additions! Our goal is to incorporate a balance of kid favorites while introducing new flavors, and this season's line up is the perfect representation!

These first two menu items are packed with flavor! Each of them highlight freshly prepared chicken, vegetables, a variety of herbs, with a house-made sauce.

Chicken Tikka Masala - Tikka masala is a popular Indian dish that is enjoyed around the world! Our unique recipe shies away from a traditional ingredients (which can often include nuts and seeds) and is made with scallion, tomato, and lots of ginger. And to make it even more flavorful, we have added tons of fresh herbs, like cilantro! Served with brown rice and green peas, this dish is a total flavor bomb which can be soaked up in the rice we serve on the side. 

chicken fajitasChicken Fajitas - Some like tacos, some like burritos, but we at Red Rabbit are loving fajitas right now! Our kitchen has come up with a special fajita sauce for the chicken that is made with peppers, mild chiles, onions, and many more fresh vegetables that make this dish taste and look bright. We also have a new vegetable side consisting of sauteed peppers and onions that go perfectly with the chicken. The warmth and spices of these fajitas make it the perfect dish for the fall season.

These next two menu items are fully vegetarian! With a nod to the environment as well as the meatless movement, we don’t think your kids will miss the meat, especially with these two new recipes.

Hand Stuffed Shells-  Brand new on our list of pasta dishes are our oversized shells stuffed with ricotta, parmesan, and a scosh of lemon zest. We also add sauteed spinach to balance out the cheese and lemon and add some beautiful and flavorful greens. This dish has been a hit with our students so far.

Veggie Burgers-  We’ve been testing and retesting these veggie burgers for months, and we are pretty thrilled that we are finally able to come in with our own version of the impossibly trendy veggie burgers. Our hand-crafted veggie patties are made with black beans, bread crumbs, and a bit of cheddar cheese. They are served on a delicious bun from Hot Bread Kitchen, a local bread company right around the corner from our kitchen in Harlem! We also make a thousand island dressing in house to put on the burgers, and to top it off, we are including our housemade pickles!
